Re: Real Talk - what is the difference between gouda and edam?
Edam is the cheese equivalent of Fosters lager - weak and bland. I go the Netherlands a lot and have never seen it in the shops there. Most of the Gouda you get over here isn't much better but the mature version is decent. They don't tend to call it Gouda over there but give it more local derivations. Always go for mature versions.

Re: Real Talk - what is the difference between gouda and edam?
Not had either in ages - whenever I'm back in the Netherlands I buy from a local farmer's market - generally 3 different ages of cheese, and then some speciality cheese (last time brought back a kilo of cheese infused with nettles - I got one small, bite-sized cube of it; the project team decided it was the dog's bollocks and have demanded I bring back more on my next trip).

Edam is made backwards

I remember trying a cheese called "Old Amsterdam" with a black rind in Holland a few years ago...that was a bit better than the others but nothing special.

Also, I have never seen it over here

Irons, I love blue cheese, one of those strong tastes that you like as you get older.
Most not all blue is not veggie though so we have to get veggie versions or veggie blues which are still good,
Love gnocchi too.

I'm hungry again now.

The UK makes the most varieties of cheese in the world. 100 more than the French.

Not a lot of people know that.

No difference; both made of flavourless rubber.

It’s the texture that I like about Dutch cheeses, and the subtle flavours

I agree with Coffee and Spandex Sidney. Dutch cheese is feety and disgusting. They ought to stop in the name of decency.

I think the Dutch should stick to producing perfect-looking, utterly tasteless, watery veg and fruit. That appears to be their forte and they have cornered the big supermarket er...market.

I had Emmental recently. It is fucking disgusting, tastes almost sweet.

Gross stuff

From what I remember from my deli days, one has less fat and the milks are from a different part of the Nederlands, originally at least.

Bin them both and go with Beemster instead.
The seasonal Graskaas for mild and smooth and the X-O for dessert (it tastes a lot like caramel with sharp bits).

These are two of the most boring and uninspiring cheeses on the planet.

Gouda we know? And why should we give Edam?

:-)
